I made this with some leftover 4 cheese and spinach mixture. It was really good! I have estimated the measurements, since I threw it all together.

Ingredients
- 1/2 cup ricotta cheese, low-fat
- 1/4 cup parmesan cheese
- 1 cup mozzarella cheese, low-fat- divided
- 1/2 cup cheddar cheese, shredded
- 1/2 cup spinach , squeezed dry
- 3 large eggs
- 2 - egg whites
- 3 tablespoons half and half
- dash - onion powder
How To Make 4 cheese spinach fritatta

Step 1Mix the eggs, whites and half and half together, then mix everything together, pour into a small nonstick oven-proof skillet that's been sprayed with Pam. You can use a non oven-proof skillet if you wrap the handle with tin foil.

Step 2Over medium heat, cook for about 2 minutes, scraping the sides and bottom. When eggs are mostly set top stirring. Cook for another min. 'til underside sets.

Step 3Top with other half of mozzarella. Place under broiler for 2-4 minutes, or until lightly browned. Remove from oven and let stand 5 min. to finish cooking. Serve in wedges.
