1Mix the eggs, whites and half and half together, then mix everything together, pour into a small nonstick oven-proof skillet that's been sprayed with Pam. You can use a non oven-proof skillet if you wrap the handle with tin foil.
2Over medium heat, cook for about 2 minutes, scraping the sides and bottom. When eggs are mostly set top stirring. Cook for another min. 'til underside sets.
3Top with other half of mozzarella. Place under broiler for 2-4 minutes, or until lightly browned. Remove from oven and let stand 5 min. to finish cooking. Serve in wedges.
