These were the pancakes served on Pancake Tuesday at the church I attended. The recipe originally was published in "The Breakfast Book" by Marion Cunningham.

Ingredients
- 1 large egg
- 1 cup 1% milk
- 4 teaspoons baking powder
- 1 tablespoon sugar
- 5 tablespoons butter or margarine (i use butter)
- 1 1/4 cups all purpose flour
- 3/4 teaspoon salt
- - fresh or frozen blueberries or other fruit, or chocolate chips (optional)
How To Make plain pancakes

Step 1Beat eggs in a bowl until thoroughly blended. Melt the butter or margarine in the microwave, ten add the butter and milk to the eggs and mix well.

Step 2Put the flour, sugar, baking powder, and salt in a bowl and mix with a fork until well mixed.

Step 3Pour the egg mixture into the flour mixture and stir only until the dry ingredients are well moistened; don't overmix.

Step 4Heat a greased griddle or skillet to about 375 degreees or until a few drops of water "dance" on the surface. Drop 2 to 3 tablespoons of batter onto the griddle (if desired, place a few blueberries, some chocolate chips, or other diced fruit onto each pancake as soon as placed on the griddle) and cook until bubbles break on the surface. turn the pancakes and cook until bottom is lightly browned. Serve hot.
