I saw this in a Cooking Light cookbook and was slightly apprehensive to try this. My family is very glad I did, and I have yet to meet anyone who didn't love these delicious pancakes.

  • 1/4 c
    all purpose flour
  • 1 c
    old fashioned oats, uncooked
  • 1 Tbsp
  • 1/2 tsp
    baking powder
  • 1/2 tsp
    baking soda
  • 1/4 tsp
    ground cinnamon
  • 1/8 tsp
  • 1 c
    nonfat buttermilk
  • 2 Tbsp
    butter, melted
  • 1 large
  • ·
    cooking spray
  • ·
    syrup, butter, fruit (optional)

How to Make Oatmeal Buttermilk Pancakes


  1. Combine flour, oats, sugar, baking powder and soda, cinnamon, and salt in a medium bowl, stirring with a whisk.
  2. Combine buttermilk, butter, and egg in a small bowl. Add to flour mixture, stirring just until moist.
  3. Heat a nonstick griddle over medium heat. Coat pan with cooking spray. Spoon about 2-3 tablespoons batter per pancake onto griddle. Turn pancakes over when tops are covered with bubbles; cook until bottoms are lightly browned. Serve with syrup, butter and fruit, if desired.
