I saw this in a Cooking Light cookbook and was slightly apprehensive to try this. My family is very glad I did, and I have yet to meet anyone who didn't love these delicious pancakes.

old fashioned oats, uncooked

baking powder
1/2 tsp
baking soda
1/4 tsp
ground cinnamon
1/8 tsp
1 c
nonfat buttermilk
2 Tbsp
butter, melted
1 large
cooking spray
syrup, butter, fruit (optional)

How to Make Oatmeal Buttermilk Pancakes


  • 1Combine flour, oats, sugar, baking powder and soda, cinnamon, and salt in a medium bowl, stirring with a whisk.
  • 2Combine buttermilk, butter, and egg in a small bowl. Add to flour mixture, stirring just until moist.
  • 3Heat a nonstick griddle over medium heat. Coat pan with cooking spray. Spoon about 2-3 tablespoons batter per pancake onto griddle. Turn pancakes over when tops are covered with bubbles; cook until bottoms are lightly browned. Serve with syrup, butter and fruit, if desired.
