I saw this in a Cooking Light cookbook and was slightly apprehensive to try this. My family is very glad I did, and I have yet to meet anyone who didn't love these delicious pancakes.

Ingredients
- 1/4 cup all purpose flour
- 1 cup old fashioned oats, uncooked
- 1 tablespoon sugar
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon ground cinnamon
- 1/8 teaspoon salt
- 1 cup nonfat buttermilk
- 2 tablespoons butter, melted
- 1 large egg
- - cooking spray
- - syrup, butter, fruit (optional)
How To Make oatmeal buttermilk pancakes

Step 1Combine flour, oats, sugar, baking powder and soda, cinnamon, and salt in a medium bowl, stirring with a whisk.

Step 2Combine buttermilk, butter, and egg in a small bowl. Add to flour mixture, stirring just until moist.

Step 3Heat a nonstick griddle over medium heat. Coat pan with cooking spray. Spoon about 2-3 tablespoons batter per pancake onto griddle. Turn pancakes over when tops are covered with bubbles; cook until bottoms are lightly browned. Serve with syrup, butter and fruit, if desired.
