Ingredients
- 2 cups flour
- 4 teaspoons baking powder
- 1/8 teaspoon each - ground nutmeg & ground allspice
- 1 teaspoon cinnamon
- 3/4 cup sugar
- 1 1/2 cups mashed pumpkin or canned pumpkin, not pie mix
- 3 - eggs
- 1 cup soured milk or regular milk
- 3/4 cup vegetable oil
- 1 1/2 teaspoons vanilla extract

Step 1In a medium bowl, mix all dry ingredients.

Step 2In another bowl, beat pumpkin, eggs, oil, milk & vanilla.

Step 3Now, add the dry ingredients to this mixture & mix thoroughly.

Step 4Grease a hot griddle and pour desired amount of batter - per size of pancakes you desire.

Step 5Cook until bottoms begin to brown and bubbles form on top, flip and cook until no wet batter remains.

Step 6Top with desired toppings - I use warm syrup and toasted pecans. Bananas are great as well.
