This pancake never fails to take me back to my childhood and summers at the lake. The recipe was given to my mom by a good family friend (Katy). She brought the recipe with her from Austria. The recipe makes one pancake, but they cook up quick so it's easy to make for a family.

Ingredients For katy's pancake

  • 2
    eggs
  • 2 Tbsp
    sugar
  • 2 Tbsp
    all purpose flour
  • jam or jelly, any flavor you like
  • powdered sugar

How To Make katy's pancake

  • 1
    Spray a non-stick skillet with cooking spray or melt a small amount of butter. Don't let the pan get too hot.

    Mix eggs, sugar and flour. Pour egg mixture into skillet and cook until almost set, lifting edges so all uncooked egg mixture gets underneath.

    Flip and cook for about 30 seconds until that side has set (I'm not a good flipper, so I usually just cover the pan as soon as I pour the eggs in so both sides set).

    Slide out onto plate and spread jam down the center (as much as you like). Roll up and sprinkle with powdered sugar.
