I promise you these are awesome. I'm a big fan of FLUFFY light pancakes and these are the closest i can get to Big Bear Diner ones. Throw out the box pancake mix and try these.
PS the cake flour also helps make these lighter

Ingredients

  • 3/4 c
    all purpose flour
  • 1/4 c
    cake flour
  • 2 +1 tsp Tbsp
    sugar
  • 1 tsp
    baking powder
  • 1//2 tsp
    baking soda
  • pinch
    salt
  • 3/4 c
    milk
  • 2 Tbsp
    vinegar
  • 2 Tbsp
    melted butter/don't use tub marg it has to much water
  • 2
    eggs (separated)
  • 1 tsp
    vanilla

How to Make Fluffy Pancakes

Step-by-Step

  1. Mix all dry ingredients and set aside.
  2. Beat egg whites till fluffy but not stiff and set aside.
  3. Mix wet ingredients and add to the dry and mix till just incorporated. Fold in egg whites. Cook on med heat till golden.
