Ingredients
- 1 1/2 cups all purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 teaspoon ground ginger
- 1 teaspoon ground cinnamon
- 1 - egg
- 1/2 teaspoon pure vanilla extract
- 1/4 cup molasses
- 1 1/2 cups water
- 1 - large apple peeled and sliced

Step 11. Whisk the flour, baking powder, baking soda, salt, ginger and cinnamon in a bowl and set aside.2. Beat the egg in a separate bowl with the vanilla and molasses until smooth. Whisk in the water until completely incorporated. Stir the flour mixture into the molasses mixture a few lumps are okay.

Step 22. Grease and heat the griddle over medium high heat. Drop the batter by large spoonfuls on to the griddle. Top each pancake with an apple ring. Cook until bubbles form and the edges are dry. Flip and cook until browned on the other side.

Step 3Heat the lemon curd and serve it warm with the pancakes.
