uncle leo's corn tortillas
My family has made these "tortillas" since I was a little girl, the recipe came from my Uncle Leo. These are like a crepe/tortilla hybrid, and are an awesome treat for any meal! My favorite combo is to serve these babies with red bell pepper, chicken, black beans and corn sautéed with fajita seasoning then topped with sour cream, salsa and pepper jack cheese. Soooooo yummy!!!

Ingredients
- 3 - eggs
- 1 1/2 cups milk
- 3 tablespoons butter, melted
- 1 teaspoon salt
- 1/2 cup flour
- 1/2 cup cornmeal
How To Make uncle leo's corn tortillas

Step 1Whisk eggs.

Step 2Add remaining ingredients in order given, whisking after each. Batter should look like thin pancake batter.

Step 3Heat a skillet over medium heat, lightly coat with cooking spray. Ladle in enough batter to just cover bottom of pan. These cook fairly fast so keep a close eye. Flip when the "tortilla" is set/cooked enough.
