1Rinse quinoa for 30 seconds with cool water.
In a heavy sauce pan combine coconut milk, water, vanilla bean, and quinoa. Bring to a boil and lower heat to simmer for 20 minutes or until all liquid is absorbed.
Remove from heat and let stand for 5 minutes. Remove vanilla bean. Stir in cinnamon, brown sugar, and maple extract.
2Serve with low fat milk , fruit, nuts, granola or a teaspoon of your favorite fruit preserves.
