Quinoa is really healthy for you. I have made it in all forms of dishes. I believe the breakfast dishes is my favorite. Mainly because it is so filling I do not get hungry by mid morning.

    quinoa
  • 1 can(s)
    coconut milk, lite
  • 1
    vanilla bean
  • 1/4 c
    water
  • 2 tsp
    cinnamon
  • 4 Tbsp
    brown sugar
  • 1 tsp
    maple extract
  • ·
    your choice of fruit, nuts or granola

How to Make Quinoa Breakfast

Step-by-Step

  1. Rinse quinoa for 30 seconds with cool water.
    In a heavy sauce pan combine coconut milk, water, vanilla bean, and quinoa. Bring to a boil and lower heat to simmer for 20 minutes or until all liquid is absorbed.
    Remove from heat and let stand for 5 minutes. Remove vanilla bean. Stir in cinnamon, brown sugar, and maple extract.
  2. Serve with low fat milk , fruit, nuts, granola or a teaspoon of your favorite fruit preserves.
