I love eggs, so I experiment any way I can so that they never become boring. This recipe I tried on my kids years ago and they have loved it since. It's great for breakfast, lunch or dinner!

How to Make Nachos and Eggs

Step-by-Step

  1. crush the nacho's in a zip lock bag and pour onto a luncheon size plate.
  2. Preheat fry pan. Spray with Pam. Crack 2 eggs and fry to your desired doneness
  3. Place cooked eggs onto nacho's on plate
    Top with salsa, then sour cream and top with cheddar cheese.
  4. Optional Toppings: Black olives, green onions, jalapeno's, sliced avocado.
