Ingredients

  • - 2 cups flour
  • - ½ tsp. baking powder
  • - ½ tsp. baking soda
  • - ¼ tsp. salt
  • - 2 eggs
  • - ¼ cup vegetable oil
  • - 1 tsp. vanilla
  • - ¾ cup milk
  • - ½ cup sugar
  • - ½ tsp. cinnamon
  • - for the cinnamon sugar topping:
  • - 2 tablespoons sugar
  • - 1 tablespoon cinnamon
  • - simple sugar:
  • - ½ cup black raspberry sparkling ice
  • - ½ cup sugar

How To Make muffins with simple syrup

  • Step 1
    Combine the Blackberry Ice drink with the sugar and bring to a boil while gently stirring. Turn the heat off and let the mixture sit for approximately 30 minutes. Preheat Oven 375 degrees: Combine all of the dry ingredients in a bowl. Combine the eggs, vanilla, milk and vegetable oil and gently beat with a fork, until the eggs are incorporated. Add the liquid ingredients to the dry ingredients while stirring. Butter the muffin tins. Fill the tins with the batter half-way. Top each muffin with the cinnamon sugar. Bake 20 - 25 minutes or until the toothpick test comes out clean. Serve the muffins with cream cheese or butter and drizzle the syrup over the muffin.
