Any one who loves caramel apples will love this muffin. Great served with breakfast or coffee.

Ingredients

  • 2 cups flour
  • 3/4 cup sugar
  • 1/4 cup butter, melted
  • 2 1/2 teaspoons cinnamon
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 - egg, lightly beaten
  • 1 cup milk
  • 1 1/2 teaspoons vanilla
  • 1/2-3/4 cup apple, peeled and chopped
  • 1/2 cup diced caramel (about 12)

How To Make caramel apple muffins

  • Step 1
    Combine flour, sugar, baking powder, cinnamon and salt in a large bowl.
  • Step 2
    In an other bowl, combine egg and milk. Stir in butter and vanilla.
  • Step 3
    Add flour mixture and stir just to blend.
  • Step 4
    Stir in apples and caramels.
  • Step 5
    Spoon into greased muffin tins or paper -lined muffin cups 3/4ths full. Sprinkle with cinnamon and sugar which have been mixed together. (optional)
  • Step 6
    Bake at 350 degrees for 25 minutes. Cool for 5 minutes before removing from pans to wire rack. Serve warm.
