Brown Sugar Baked Oats

This recipe is from Gooseberry Hometown Favorites cookbook submitted by Linda Varner of Three Springs PA
It is delicious and can be eaten as a breakfast bar, cereal (plain or with milk), or as a snack.
I'm sharing the original recipe, however I add a handful of raisins to it.

  • 3 c
    quick cooking oats, uncooked
  • 1 tsp
    baking powder
  • 3/4 c
    brown sugar, packed
  • 1 tsp
  • 1 Tbsp
  • 3/4 c
    chopped walnuts
  • 1/2 c
    raisins (optional)
  • 1/2 c
  • 2
  • 1 c
  • 1 tsp
    vanilla extract

How to Make Brown Sugar Baked Oats


  1. Combine dry ingredients, including walnuts and raisins.
  2. Add remaining ingredients to dry mixture.
    Spread in 9" square pan.
  3. Bake at 350 for 30 minutes.
    Cut into squares.
