yield makes about 8 tacos

Ingredients

  • 1 pound breakfast sausage
  • 1 can refried beans
  • 10 large eggs
  • 1 bunch green onions, cut up
  • 2 - tomatoes, cut up
  • 2 large avocados, cut up
  • - salsa of your choosing
  • - sour cream (optional)
  • 8 ounces cheddar cheese, shredded
  • 1 box taco shells
  • 1 - lime, cut into wedges
  • 1 can peppers

How To Make breakfast tacos

  • Step 1
    first cut up green onions, tomatoes and avocados and set aside. Grate your cheese and set it aside as well. Drain peppers and set them aside.
  • Step 2
    in medium skillet saute breakfast sausage, you want it to be ground up well. While you are cooking the sausage, put refried beans into small sauce pan and warm them over a low heat. When sausage is done, I put it on a dish and set it in the oven on the keep warm setting.
  • Step 3
    Now scramble the eggs over a medium heat, do not add water or milk to your eggs as it will make them watery.
  • Step 4
    When eggs are done, serve and let everyone make their taco to their liking. I make them by first putting refried beans in the shell, followed by sausage, eggs, salsa, cheese, topped with onions, tomatoes and avocados and a dab of sour cream. I also squeeze a bit of lime juice on the sausage also. You can include items of your liking in this dish. Enjoy!
