Ingredients

  • 2 large yukon gold potatoes
  • 2 tablespoons ketchup or barbecue sauce
  • 4 slices whole wheat bread

How To Make breakfast on the run

  • Step 1
    Scrub and prick entire potatoes with a fork.
  • Step 2
    Microwave on high for 5 minutes.
  • Step 3
    Remove and thickly slice lengthwise.
  • Step 4
    Place on a nonstick griddle and brown on both sides-about 10 minutes.
  • Step 5
    Toast bread and then spread with ketchup or barbecue sauce; place potato slices on bread and serve at once.
