breakfast tortilla
This is a delicious breakfast recipe, that my family thoroughly enjoys. Could easily be doubled or tripled for a lot of people. Mighty tasty indeed! Enjoy!

Ingredients
- 5 large flour tortilla's
- 1 1/2 tablespoons butter
- 1/2 can chopped green chiles
- salt - & pepper to taste
- 1/2 - chopped onion
- 1 1/2 cups shredded, sharp cheddar cheese - divided
- 8 large eggs - lightly beaten
- salsa, - chopped tomatoes, sour cream or favorite toppings
- toothpicks - for securing
How To Make breakfast tortilla

Step 1Preheat oven to 375 degree F. Loosely secure tortillas in foil and bake for 10 - 15 minutes, to soften and make easier to work with. In a medium skillet, brown onions in butter until soft. Add the green chiles, eggs, salt and pepper.Cook over low scrambling eggs until just soft but not completely set.

Step 2Stir in 3/4 cup cheese.

Step 3Spread an equal amount of egg mixture down the center of each tortilla.

Step 4Fold in each side and secure with a toothpick.

Step 5Place into a greased 9 x 13 baking dish.

Step 6Top with remaining cheese and bake for 15 - 20 minutes or until cheese is melted and golden.

Step 7Remove form oven and serve with your favorite condiments. I used tomato, green onion, sour cream and salsa.. My son ate 3...I think he liked them...will heat the other 2 for breakfast...Enjoy!
