These muffins began with a basic muffin recipe, but have become a family favorite. Using both oil and applesauce makes them very moist, not tough and chewy the way some things using oat bran can be.

Ingredients

  • 1 - egg
  • 3/4 cup milk
  • 1/2 cup vegetable oil
  • 4 tablespoons applesauce
  • 1/3 cup sugar
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1 1/2 cups unbleached white flour
  • 1/2 cup dry oat bran hot cereal
  • 1 medium apple, peeled and chopped
  • dash - nutmeg
  • TOPPING:
  • 1 1/2 teaspoons dry oat bran hot cereal
  • 1 1/2 teaspoons crystal sugar
  • dash - cinnamon

How To Make apple cinnamon muffins

  • Step 1
    Preheat oven to 400 degrees. Lightly spray a 12 cup muffin tin, or a 6 cup "Texas" muffin tin with cooking spray.
  • Step 2
    In a medium bowl, beat together egg, milk, oil and applesauce.
  • Step 3
    Add dry ingredients to bowl and mix just until moist. Fold in chopped apples.
  • Step 4
    Pour into prepared muffin tin. Sprinkle with topping.
  • Step 5
    Bake 15 to 20 minutes until toothpick comes out clean. Let cool 5 minutes before removing from pan.
