My darling husband loves to come up with new recipes for things to eat without the carbs in bread or potatoes. This was his latest recipe attempt, and it was rather tasty with a poached egg or two.

Ingredients

  • 1 can libby's corned beef
  • 6 ounces canned sliced beets, drained and finely chopped
  • 1/2 small onion, finely chopped

How To Make low carb red flannel hash

  • Step 1
    Drain the sliced beets and chop fine. Chop 1/2 small onion into fine dice.
  • Step 2
    In a 9 inch skillet, break apart the corned beef and cook 3 to 4 minutes. Add the onion and cook until the onion is golden, another 3 to 5 minutes. Add the chopped beets and heat through.
  • Step 3
    Serve with poached eggs.
