hearty mans breakfast bagel
This is my husbands favorite breakfast sandwich...nothing special, but the combinations of the Everything bagel, thick smoked bacon and a melted slice of sharp cheddar cheese on 2 fried eggs, slathered with mayonnaise and a slice of sweet onion...I thought it might give someone reading this recipe the urge to make one...can always switch out the meat and cheeses, even the type of bagel...we also like the onion bagels... The makings of a great filling sandwich...these are great anytime of the day, not just for breakfast! Enjoy!

Ingredients
- 1 - thomas' everything bagel or favorite
- 2 - eggs
- 2 - 3 slices thick, smoked bacon
- 1 slice sharp cheddar cheese
- 2 tablespoons mayonnaise
- slice - sweet onion
- salt - & pepper to taste
How To Make hearty mans breakfast bagel

Step 1Fry your bacon until crisp as you like. Remove to drain on paper towels. Don't drain grease. In the same skillet, over not too high of heat, crack your eggs close together. I poke the yellows to break. Salt and pepper. When eggs are ready to flip...flip them to the other side, keeping as close together as possible. Continue frying until cooked through. Place a slice of cheese on the egg, I then pour a little water in the skillet and cover for a minute or so, to melt the cheese.

Step 2Toast your bagel. Slather 1 tablespoon of mayonnaise on both halves of bagel - cut sides. Place eggs on bottom side of bagel, followed by bacon strips and onion. Add the top half of bagel and your good to go... These breakfast sandwiches wouldn't be for those watching their figures.
