I've been making these for years for my family...my kids (now grown) and husband love sitting around the breakfast table munching on these toasty open-faced English muffin sandwiches! Everyone we introduce them to, loves them too! Enjoy, Yo Duran

Ingredients

  • 16 ounces breakfast sausage (i use jimmy dean brand)
  • 2 large potatoes, diced very small
  • 3-4 tablespoons cooking oil
  • 1/4 teaspoon salt and pepper
  • 1/4 teaspoon garlic powder
  • small jar cheese whiz spread
  • 6 medium english muffins (i use bays or thomas brand)
  • 2 medium avacados, sliced
  • 2 medium tomato, sliced
  • small jar salsa or hot sauce

How To Make brunch on a muffin

  • Step 1
    Heat oil in large frying pan and add diced potatoes, salt, pepper, and garlic powder. Fry until soft and browned. Drain oil. At the same time... cook sausage till brown in another smaller frying pan. Drain oil. Combine potatoes and sausage in the larger pan.
  • Step 2
    Split english muffins and spread cut side generously with cheese whiz. Lay cheese side up on cookie sheet. Using an ice cream scoop, put one scoop of sausage/potato mixture on top of each muffin half.
  • Step 3
    Heat muffins under broiler about 5-10 minutes until cheese is bubbly and muffin edges are toasted. Serve with avocado and tomato slices on top. It's also delish with salsa!
