I've never heard of a cherry omelet before, but it sounds like they are quite popular in Switzerland. This recipe is from Morning Food from Cafe Beaujolais.

Ingredients

  • FILLING:
  • 1 cup pitted fresh cherries, coarsely chopped
  • 1 tablespoon sour cream
  • OMELET:
  • 2 - eggs
  • 2 teaspoons sugar
  • 1/8 teaspoon vanilla extract
  • 1 teaspoon butter

How To Make cherry omelette

  • Step 1
    Beat together the eggs, sugar, and vanilla.
  • Step 2
    In a small nonstick pan, heat the cherries quickly until warm.
  • Step 3
    In another nonstick pan heat the butter until it foams, then add the eggs and make an omelet.
  • Step 4
    When the eggs are set, add the sour cream and then the warm cherries.
  • Step 5
    Fold and serve.
