This is a great way to start your weekend. The smell of chorizo cooking always makes my mouth water. These breakfast burritos are delicious and filling. I hope you try them soon. Southern Food With Flare

Ingredients

  • 3 - tortillas, flour -i use https://www.justapinch.com/recipes/bread/bread-flatbread/homemade-flavored-flour-tortillas.html?p=1
  • 1 1/2 cups frozen hash browns, thawed
  • 4 - tablespoons vegetable oil
  • 1/4 teaspoon salt
  • 6 ounces fresh chorizo
  • 3 - eggs, beaten
  • 1 cup cheese, shredded -i used a mix of cheddar and pepper jack

How To Make weekend breakfast burritos

  • Step 1
    In a medium skillet on medium heat add 2 tablespoons vegetable oil, and salt.
  • Step 2
    Add hash browns and cook until golden brown about 5 minutes.
  • Step 3
    Flip and add the other 2 tablespoons of vegetable oil and cook until the bottom is golden - another five minutes.
  • Step 4
    Remove and keep warm in oven while you finish the burritos.
  • Step 5
    Add chorizo to the same skillet. Break down chorizo as you would ground beef.
  • Step 6
    When it resembles cooked ground beef add the three beaten eggs.
  • Step 7
    Stir until eggs are soft-scrambled. Turn off heat, top with cheese, and cover skillet until cheese has melted.
  • Step 8
    Heat tortillas in microwave - about 15 seconds.
  • Step 9
    On top of tortillas, add hash browns, chorizo mixture, and a couple heaping spoonfuls of salsa fresca.
  • Step 10
    Roll up burrito style and enjoy!
