quick eggs
The first time I saw this in my recipe book..I thought wow!..what kind of recipe is this...till I tried it with left over Easter eggs...the butter gives the eggs such a savory flavor...I always kept boiled eggs made...as my kids loved these for breakfast and still do...nobody could mess these up...lol! Go ahead and try them with your leftover Easter eggs...or boil you a few...you will be pleasantly surprised how yummy!...serve with an English muffin or some toast...this was my breakfast, they're great for low carb dieters.

- 2 - hard boiled eggs, chopped
- 1 tablespoon butter, softened

How To Make quick eggs

Step 1Chop eggs, place in a bowl or on a plate, salt and pepper, add 1 tablespoon of butter. Cover with paper towel. Microwave for 1 minute...stir...done! Enjoy...they really are great...great for low carb diets as well..
