Ingredients
- 1 pound baking potatoes, cubed
- 1 - yellow onion, coarse chopped
- 1 - green bell pepper, coarse chopped
- 1 - red or orange bell pepper, coarse chopped
- 1 box heat n serve sausage links, rough chopped
- 6 large eggs
- 2 tablespoons vegetable oil
- - salt, pepper, and garlic powder to taste
- 3/4 cup shredded cheddar cheese
- 1/2 cup shredded mozzarella cheese
How To Make potatoes and eggs

Step 1In a large mixing bowl, mix together veggies, toss with oil and seasonings to taste (rough guess how much you typically like on your potatoes when frying)

Step 2In a large cast iron or oven proof skillet, sprinkle the chopped sausage links. spread potato mixture on top. Cook for about 5 minutes on med-high heat, scrape up the bottom and stir. Cook until potatoes are almost tender. Top with cheddar cheese. Crack eggs on top. Top with mozzarella cheese.

Step 3Place in a preheated oven at 400, cook until eggs are cooked the way you like, we like the yolk med-hard so about 10 min.
