This recipe is adapted from a blog called, "2 Foodies and a Pup." The couple, apparently, is originally from the Pacific Northwest and they like to cook with hometown ingredients whenever they can find them. I don't know about the dog. Sorry.

- 2 - whole wheat english muffins
- 4 ounces tillamook extra sharp cheddar cheese
- 4 ounces cooked salmon
- 1/2 - avocado
- 1/2 teaspoon fresh lemon juice
- 4 - eggs
- - salt
- - fresh ground black pepper
How To Make pacific northwest breakfast toasts (serves 2)

Step 1Separate English muffin halves and toast in a toaster. Meanwhile, slice the cheese and set aside. Reheat your salmon using a microwave, if desired. Mash the avocado with the lemon juice.

Step 2Prepare eggs as you wish but, poaching is recommended!

Step 3To assemble: Top an English muffin half with sliced cheese, mashed avocado, and salmon. Place a cooked egg on top and season with salt and pepper. Replace the top of the muffin.
