Pacific Northwest Breakfast Toasts (Serves 2)

Lucy Selvaggio-Diaz

This recipe is adapted from a blog called, "2 Foodies and a Pup." The couple, apparently, is originally from the Pacific Northwest and they like to cook with hometown ingredients whenever they can find them. I don't know about the dog. Sorry.

  1. Separate English muffin halves and toast in a toaster. Meanwhile, slice the cheese and set aside. Reheat your salmon using a microwave, if desired. Mash the avocado with the lemon juice.
  2. Prepare eggs as you wish but, poaching is recommended!
  3. To assemble: Top an English muffin half with sliced cheese, mashed avocado, and salmon. Place a cooked egg on top and season with salt and pepper. Replace the top of the muffin.
