Threw this together the other morning. So much better than the canned stuff. Either use a can of corned beef or leftover corned beef. Either way it's a satisfying breakfast. Add a couple eggs to the top and dig in.

Ingredients

  • ·
    bacon grease or oil to cover bottom of pan for frying potatoes
  • 1 large
    potato washed and cubed - i used a russet with skin on
  • 1 can(s)
    corned beef or left over corned beef
  • clove
    garlic, minced
  • 1/2
    onion, chopped
  • 3 Tbsp
    red bell pepper, diced
  • 1 1/2 tsp
    onion or garlic powder
  • ·
    salt and pepper to taste
  • 1 tsp
    red pepper flakes - optional
  • scallions
    for garnish - optional

How to Make Nothing Fancy Hash

Step-by-Step

  1. Wash, cube and boil potato till fork tender, not mushy.
  2. In a medium skillet over medium - high heat, add oil or bacon grease. When hot, add everything but the corned beef. Saute until the potatoes and veggies are browning.
  3. I leave corned beef pretty chunky, and add to the potatoes. Toss until heated through.

    Sometimes I smash it down and cook till gets a crispy crust, then flip with spatula to the other side. Today I just tossed with veggies to heat through. Totally up to you.
  4. Place a portion of hash on a plate. Place your eggs on top. Time to enjoy a flavorful breakfast.

    I say this feeds 4, but my husband ate the whole pan himself...guess that's a good sign.
