nothing fancy hash
Threw this together the other morning. So much better than the canned stuff. Either use a can of corned beef or leftover corned beef. Either way it's a satisfying breakfast. Add a couple eggs to the top and dig in. My photos

Ingredients
- - bacon grease or oil to cover bottom of pan for frying potatoes
- 1 large potato washed and cubed - i used a russet with skin on
- 1 can corned beef or left over corned beef
- clove - garlic, minced
- 1/2 - onion, chopped
- 3 tablespoons red bell pepper, diced
- 1 1/2 teaspoons onion or garlic powder
- - salt and pepper to taste
- 1 teaspoon red pepper flakes - optional
- scallions - for garnish - optional
How To Make nothing fancy hash

Step 1Wash, cube and boil potato till fork tender, not mushy.

Step 2In a medium skillet over medium - high heat, add oil or bacon grease. When hot, add everything but the corned beef. Saute until the potatoes and veggies are browning.

Step 3I leave corned beef pretty chunky, and add to the potatoes. Toss until heated through. Sometimes I smash it down and cook till gets a crispy crust, then flip with spatula to the other side. Today I just tossed with veggies to heat through. Totally up to you.

Step 4Place a portion of hash on a plate. Place your eggs on top. Time to enjoy a flavorful breakfast. I say this feeds 4, but my husband ate the whole pan himself...guess that's a good sign.
