As usual, I modified this a bit that isn't shown in the photo. It was simply to add garnishes of e bit of sour cream,avocado & a tiny bit of hot sauce to decorate it.

Ingredients

  • 4 cups fresh hash browns-or frozen & thawed
  • 2 cups grated mexican cheese mixture
  • 2-3 tablespoons trader joe's taco seasoning (or your favorite brand)
  • 12 - eggs
  • 1-2 teaspoon salt
  • 1 teaspoon pepper
  • OPTIONAL:
  • 1-2 - chopped avacados
  • 12 tablespoons sour cream
  • 1-2 dash taco sauce hot or mild
  • 1-2 cup chopped tomatoes

How To Make mexican baked eggs

  • Step 1
    Heat oven to 375 degrees
  • Step 2
    In large mixing bowl toss the hash browns, cheese and taco seasoning together.
  • Step 3
    In greased muffin tin...press enough of the hash brown mixture into each of 12 cups-coming about 1/2 way up to the sides of each one
  • Step 4
    Bake these for 10-12 minutes.
  • Step 5
    Remove from oven and crack one egg into each nest.
  • Step 6
    Bake for about 15 minutes or until the eggs are set, and not runny. Do not bake until hard,
  • Step 7
    Place two egg nests on each plate & garnish with avocados, tomatoes, sour cream & top with a bit of hot sauce (or allow each person to choose which garnishes are preferred).
