I dont like throwing out leftovers. I was in a creative mood today. I put together this crazy sandwich, And it worked!!! You can use any leftover pizza, veggie, cheese, hawaiian which would of been my choice but cheese and pepperoni is what I had. So I added a quick pineapple aioli. Give it a try, its fun, tasty. I wouldnt mind being at a brunch and getting this ;)

Ingredients

  • 2 slices leftover pizza
  • 2 tablespoons butter
  • 1 tablespoon canola oil
  • AIOLI
  • 1 tablespoon crushed pineapple
  • 1 tablespoon mayo
  • CUSTARD
  • 2-3 large large eggs
  • 1/4 cup half and half
  • 1 teaspoon vanilla
  • 3 pinches cinnamon

How To Make leftover pizza w/pineapple. monte cristo style

  • Step 1
    Grab Your 2 slices of pizza, cut off the crusts. Slice in half the long way, add Your glue ;) In my case I put together an aioli, spread on both sides Jam would be great also. Put two slices together with filling in the middle. Press down and wrap in plastic wrap tight and refrigerate for at least 30min. Up to 6hrs.
  • Step 2
    Make Your custard mixture by whisking eggs half and half with cinnamon and vanilla. Dip Your unwrapped pizza sandwiches in custard soaking well. butter oil pan on medium heat, Place dipped sandwiches on griddle cooking and flipping doing all sides using tongs. I did all sides because my pizza crust was thick. Cook for about 6 minutes total till golden brown. Top with powdered sugar (which I didnt have) I know thats bad! Serve with fruit. Great cut up smaller for an app.
