My kids and I love quiche but recently I didn't have a pie crust ( or time to make one from scratch ) so I tweeked my usual recipe a bit - and we loved it ! Now they want me to make it with hash brown crust every time :-)

Ingredients

  • 1/2 bag frozen hash browns
  • 2 tablespoons butter, melted
  • 4 - eggs, beaten
  • 1 cup light mayo
  • 1 cup milk
  • 2 tablespoons all purpose flour
  • 6 ounces cooked meat( diced ham, shrimp, crab, etc)
  • 1 1/2 cups cheese

How To Make hash brown crust quiche

  • Step 1
    Preheat oven to 350 degrees
  • Step 2
    Spread hash browns evenly in pie plate and brush with melted butter Bake for about 12 minutes ( dont cook until browned or will end up overcooked)
  • Step 3
    Mix all other ingredients and pour over hash brown crust Bake for about one hour .
