denny's chicken fajita breakfast skillet
I've never had this at Denny's so don't know how it compares. We have had it at home and everyone enjoyed it. I used a little less cheese and saved some to garnish. The recipe states that at Denny's you get your choice of eggs with this. I'm not sure where I got this recipe so don't know who to give the credit to.

Ingredients
- 2 - chicken breasts, boneless and skinless
- 2 cups homemade fries cooked, or frozen hashbrowns
- 1 teaspoon fajita seasoning
- 1 small bell pepper, chopped
- 1 small onion, chopped
- 4 - eggs
- 1/4 cup half and half
- 1/2 cup shredded cheese
- 1/2 cup sour cream
- 1/2 cup guacamole
- - salt, to taste
- - freshly ground black pepper, to taste
- - salsa, optional

Step 1Rub chicken breast with fajita seasoning and let marinate for 1/2 hour.

Step 2Slice marinated chicken into strips.

Step 3Use cooking spray and saute chicken in a hot skillet until done.

Step 4Add onion and bell pepper to skillet, fry and stir on high so as to cook quickly.

Step 5Remove all from heat and set aside.

Step 6Brown left over cooked potatoes or use frozen hashbrowns, cooked until desired crispness.

Step 7Salt and pepper to you taste.

Step 8Divide in half and place on serving platters.

Step 9Mix egg with half-and-half, salt and pepper to taste.

Step 10Cook egg mixture into two separate omelets.

Step 11Place on top of browned potatoes.

Step 12Place one half of cooked fajita meat and cooked onions and peppers on top of omelet.

Step 13Sprinkle with 1/4 cup cheese on each fajita platter.

Step 14Serve with sour cream, guacamole, and salsa if you like.
