breakfast pancake and egg sandwich
This is a fun brunch sandwich I created with pancakes and fried eggs. You'll be tempted to pick it up, but use a knife and fork - it's a lot less messy. Serve along with a side of hash browns or home fries for a hearty meal. You can also substitute scrambled eggs or an omelet (just don't fold the omelet) in place if the fried eggs. You can also add mayo, hot sauce, mustard to your sandwich.

Ingredients
- 2 large (8 inch) pancakes per person
- 2 - eggs, fried per person
- - bacon, optional (i use vegetarian style bacon)
- - slice(s) of cheese, your favorite
- SECOND OPTION - OMELET
- - small amount of diced mushrooms, onion, tomato, sweet peppers, anything you like in omelets
- 2 - eggs, whisked
- - small amount of shredded cheese - your favorite
- - small amount of vegetable oil
- - salt and pepper to taste
- ANOTHER OPTION - SCRAMBLED EGGS
How To Make breakfast pancake and egg sandwich

Step 1Make your favorite pancake recipe. Keep warm while you get your eggs ready. (Or make the pancakes the night before and warm them up in the microwave just before putting the sandwich together.)

Step 2Fry eggs, scramble eggs or prepare your omelet.

Step 3Place one pancake on a plate, place eggs on the pancake, add bacon and or cheese and top with second pancake.
