This sounds like a fun breakfast. I'm guessing that it could be made ahead and cooked right before serving.

  • ·
    scrambled eggs:
  • 1 Tbsp
    butter or margarine
  • 6
    eggs, lightly beaten
  • ·
    salt and pepper, to taste
  • ·
  • 1
    round loaf, 8-9 inches
  • 4 oz
    ham slices
  • 1/2
    red bell pepper, sliced crosswise into rings
  • 1/2 c
    monterey jack cheese, shredded (2 ounces)
  • 1/2 c
    cheddar cheese, shredded (2 ounces)
  • 1/2 c
    ripe olives, sliced
  • 1 medium
    tomato, sliced
  • 8 oz
    mushrooms, sliced, lightly sauteed

How to Make Breakfast In A Loaf


  1. Preheat oven to 350F.
  2. Cut 2-inch slice from top of loaf; set aside for lid.
  3. Remove soft interior of loaf, leaving a 1-inch thick wall and bottom.
  4. Place ham in bottom of loaf.
  5. Top with bell pepper rings; sprinkle with half of cheeses.
  6. Layer Scrambled Eggs, olives and tomato over cheeses.
  7. Top with remaining cheeses and mushrooms.
  8. Place lid on loaf. Wrap in foil. Place on baking sheet.
  9. Bake about 30 minutes or until heated through.
  10. Cut into 8 wedges.
