This sounds like a fun breakfast. I'm guessing that it could be made ahead and cooked right before serving. Found in All Time Family Favorites - Breakfast & Brunch.

Ingredients

  • - scrambled eggs:
  • 1 tablespoon butter or margarine
  • 6 - eggs, lightly beaten
  • - salt and pepper, to taste
  • - loaf:
  • 1 - round loaf, 8-9 inches
  • 4 ounces ham slices
  • 1/2 - red bell pepper, sliced crosswise into rings
  • 1/2 cup monterey jack cheese, shredded (2 ounces)
  • 1/2 cup cheddar cheese, shredded (2 ounces)
  • 1/2 cup ripe olives, sliced
  • 1 medium tomato, sliced
  • 8 ounces mushrooms, sliced, lightly sauteed

How To Make breakfast in a loaf

  • Step 1
    Preheat oven to 350F.
  • Step 2
    Cut 2-inch slice from top of loaf; set aside for lid.
  • Step 3
    Remove soft interior of loaf, leaving a 1-inch thick wall and bottom.
  • Step 4
    Place ham in bottom of loaf.
  • Step 5
    Top with bell pepper rings; sprinkle with half of cheeses.
  • Step 6
    Layer Scrambled Eggs, olives and tomato over cheeses.
  • Step 7
    Top with remaining cheeses and mushrooms.
  • Step 8
    Place lid on loaf. Wrap in foil. Place on baking sheet.
  • Step 9
    Bake about 30 minutes or until heated through.
  • Step 10
    Cut into 8 wedges.
