bacon and egg tacos
Another breakfast favorite at my house. You can make these ahead of time. Srap in plastic wrap and refrigerate to save time on busy mornings. Just microwave to warm before serving.

Ingredients
- 8 - eggs
- 12 (6 in.) - flour tortillas
- 12 slices bacon, cooked crisp and crumbled
- 1/2 cup shredded monterrey jack cheese
- - picante sauce or salsa (optional)
How To Make bacon and egg tacos

Step 1Cook and crumble the cbacon. Set aside.

Step 2Beat eggs. Place the eggs, bacon and cheese in a skillet. Cook stirring often until eggs are done and ingredients are well mixed.

Step 3Warm the tortillas either in a skillet or in the microwave. Be sure they are just warm and still soft and bendable.

Step 4Divide the egg mixture evenly between the 12 tortillas, placing it in the middle of each.

Step 5Add salsa or picante if desired.

Step 6Roll each taco. Serve warm.
