I love making messes such as these, and are my husbands favorite kind of breakfast. I'm always throwing something different together, and it always turns out delicious! I'd say a clean plate stands for something. LOL! Use whatever veggies you like, the results will still be wonderful! Enjoy!

yield 1 in my husbands case - but can feed 2

Ingredients

  • 2 - hash brown patties, thawed
  • 2 - bob evans sausage patties or your favorite, thawed
  • bacon - fat is what i used to brown with
  • 1/4 - of a red onion, chopped
  • 1/4 - red bell pepper, chopped
  • handful - of mushrooms
  • salt - pepper & garlic salt
  • eggs - your way, we like ours dippy

How To Make ~ another mess ~ cassies

  • Step 1
    In an iron skillet over low - medium heat, add some bacon grease if you have, or oil. Place the hash brown patties and sausage in the heated skillet. Fry until thy start to brown on one side.
  • Step 2
    I then, chop both up with a metal spatula and then add the veggies and seasonings. Cook long enough to get a crust on the potatoes and until sausage is completely cooked through.
  • Step 3
    Plate and add your eggs on top. We like over easy eggs, so that the busted yolks can merry with the rest of this yummy goodness.
  • Step 4
    Enjoy!
