zucchini (or spinach) squares (or mcmuffins)

This can be a nice appetizer, or brunch item with a salad, or a side dish, its always popular whenever I make it! It is equally good with zucchini or spinach.

Ingredients

  • 3 cups zucchini shredded or 1 bag frozen spinach
  • 1 cup bisquick
  • 1/2 - onion chopped
  • 1/2 cup parmesan cheese
  • 2 tablespoons parsley flakes
  • 1/2 teaspoon salt
  • 1/2 teaspoon oregano, dried
  • 2 cloves garlic minced
  • 1/2 cup vegetable oil
  • 4 - eggs, beaten
  • dash - pepper

How To Make zucchini (or spinach) squares (or mcmuffins)

  • Step 1
    Preheat oven to 350 degrees
  • Step 2
    Grease (or pam) a 9 x 12 baking pan or a 12 muffin pan
  • Step 3
    Mix all ingredients together thoroughly. Spread (or spoon) into greased pans.
  • Step 4
    Bake 30-40 minutes (depending on your oven) until golden brown
