This can be a nice appetizer, or brunch item with a salad, or a side dish, its always popular whenever I make it! It is equally good with zucchini or spinach.

Ingredients
- 3 cups zucchini shredded or 1 bag frozen spinach
- 1 cup bisquick
- 1/2 - onion chopped
- 1/2 cup parmesan cheese
- 2 tablespoons parsley flakes
- 1/2 teaspoon salt
- 1/2 teaspoon oregano, dried
- 2 cloves garlic minced
- 1/2 cup vegetable oil
- 4 - eggs, beaten
- dash - pepper
How To Make zucchini (or spinach) squares (or mcmuffins)

Step 1Preheat oven to 350 degrees

Step 2Grease (or pam) a 9 x 12 baking pan or a 12 muffin pan

Step 3Mix all ingredients together thoroughly. Spread (or spoon) into greased pans.

Step 4Bake 30-40 minutes (depending on your oven) until golden brown
