This can be a nice appetizer, or brunch item with a salad, or a side dish, its always popular whenever I make it! It is equally good with zucchini or spinach.

Ingredients

zucchini shredded or 1 bag frozen spinach
1 c
bisquick
1/2
onion chopped
1/2 c
parmesan cheese
2 Tbsp
parsley flakes
1/2 tsp
salt
1/2 tsp
oregano, dried
2 clove
garlic minced
1/2 c
vegetable oil
4
eggs, beaten
dash
pepper

How to Make Zucchini (or Spinach) Squares (or McMuffins)

Step-by-Step

  • 1Preheat oven to 350 degrees
  • 2Grease (or pam) a 9 x 12 baking pan or a 12 muffin pan
  • 3Mix all ingredients together thoroughly. Spread (or spoon) into greased pans.
  • 4Bake 30-40 minutes (depending on your oven) until golden brown
