zucchini bake
My mom made this recipe for years. I don't know where she got it but I suspect she made it her own in many ways. I have made this recipe for 20 years, often bringing a pan to work where it was always gobbled down. I hope you enjoy it!

Ingredients
- 3 cups zucchini, diced skin on
- 1 cup bisquick
- 1/2 cup onion, chopped
- 3 to 4 - garlic bulbs, minced
- 2 tablespoons parsley, chopped
- 1/2 cup mozzarella cheese, shredded
- 1/2 cup cheddar cheese, shredded
- 4 large eggs, beaten
- 1/2 cup vegetable oil
- 1/2 tablespoon salt and pepper or to taste
- - butter or spray for baking dish
How To Make zucchini bake

Step 1Preheat oven to 350 degrees F.

Step 2Butter or spray a 9" x 13" Baking dish.

Step 3In a bowl, combine all ingredients, stirring lightly until evenly combined.

Step 4Pour into baking dish and bake at 350 degrees F for 25 to 30 minutes.
