Great way to use up zucchini from the garden. And it can be served at a brunch as well as lunch or dinner!

1 1/4 lb
zucchini, cut into 1/2 inch cubes
16 oz
monterey jack cheese, cubed
1/2 c
eggs, beaten
1/4 c
green pepper, chopped
1/4 c
fresh parsley, chopped
3 Tbsp
all-purpose flour
2 tsp
baking powder
salt and pepper to taste

How to Make Zucchini Bake


  • 1Cook zucchini in a small amount of boiling water 5 minutes or until crisp-tender; drain.
  • 2Combine the zucchini and the remaining ingredients; stir well.
  • 3Pour the zucchini mixture into a greased 13 x 9 x 2 inch baking dish. Bake, uncovered, at 350 degrees for 40 minutes or until the zucchini mixture is set and the top is lightly browned. Let stand 10 minutes before serving.
