Ingredients
- 1 1/4 pounds zucchini, cut into 1/2 inch cubes
- 16 ounces monterey jack cheese, cubed
- 1/2 cup milk
- 4 - eggs, beaten
- 1/4 cup green pepper, chopped
- 1/4 cup fresh parsley, chopped
- 3 tablespoons all-purpose flour
- 2 teaspoons baking powder
- - salt and pepper to taste
How To Make zucchini bake

Step 1Cook zucchini in a small amount of boiling water 5 minutes or until crisp-tender; drain.

Step 2Combine the zucchini and the remaining ingredients; stir well.

Step 3Pour the zucchini mixture into a greased 13 x 9 x 2 inch baking dish. Bake, uncovered, at 350 degrees for 40 minutes or until the zucchini mixture is set and the top is lightly browned. Let stand 10 minutes before serving.
