Ingredients

  • 1 32-oz packages frozen hash brown potatoes
  • 1 pound bacon, diced, cooked, and drained (or ham below)
  • 1 pound cooked ham, cubed (or bacon above)
  • 1 - onion, diced
  • 1 - bell pepper, diced
  • 1 1/2 cups cheddar or monterey jack cheese, shredded
  • 12 - eggs
  • 1 cup milk
  • 1 teaspoon salt
  • 1 teaspoon pepper

How To Make western omelet casserole

  • Step 1
    Place a layer of frozen potatoes on the bottom of slow cooker.
  • Step 2
    Add a layer of bacon, then onions, green pepper, and cheese.
  • Step 3
    Repeat the layering process 2 or 3 more times, ending with a layer of cheese.
  • Step 4
    Beat eggs, milk, salt, & pepper together.
  • Step 5
    Pour over crock pot mixture.
  • Step 6
    Cover and cook on low for 10-12 hours.
