Ingredients
- 1 32-oz packages frozen hash brown potatoes
- 1 pound bacon, diced, cooked, and drained (or ham below)
- 1 pound cooked ham, cubed (or bacon above)
- 1 - onion, diced
- 1 - bell pepper, diced
- 1 1/2 cups cheddar or monterey jack cheese, shredded
- 12 - eggs
- 1 cup milk
- 1 teaspoon salt
- 1 teaspoon pepper
How To Make western omelet casserole

Step 1Place a layer of frozen potatoes on the bottom of slow cooker.

Step 2Add a layer of bacon, then onions, green pepper, and cheese.

Step 3Repeat the layering process 2 or 3 more times, ending with a layer of cheese.

Step 4Beat eggs, milk, salt, & pepper together.

Step 5Pour over crock pot mixture.

Step 6Cover and cook on low for 10-12 hours.
