Ingredients
- 14 ounces breakfast sausage links
- 1 medium red onion, finely chopped
- - cooking oil spray
- 2 ounces salami, cut into 1/2-inch pieces
- 1 medium red pepper, cut into 1/2-inch pieces
- 8 large eggs
- 1/2 cup heavy cream
- 1/2 cup coarsely grated cheddar cheese
- 1/2 bunch flat-leaf parsley, chopped or to taste
How To Make weekend sausage bake

Step 1Preheat oven to 400°F. Lightly grease a 8-inch square ovenproof dish. Heat a large skillet over moderate heat. Cook and turn sausages for 4-5 mins or until cooked through. Drain on paper towels.

Step 2Spray onion with oil. Add to pan. Saute for 3 mins. Add salami and diced pepper; cook for 4 mins more or until vegetables soften. Transfer to a medium heatproof bowl; allow to cool.

Step 3Whisk eggs, cream, cheese and parsley in a large bowl. Stir into onion mixture. Pour into prepared dish. Top with sausages.

Step 4Bake, uncovered, for 30-45 mins, or until mixture is set. To serve, cut bake into slices.
