My family loves this and it can be easily changed to suit your tastes. Best of all, it's prepared the night before, so you don't have to spend all morning in the kitchen! Sometimes I use browned breakfast sausage (in the roll) in place of the ham.

Ingredients

  • 3 tablespoons vegetable oil
  • 2lb packages frozen o'brien potatoes or hash browns
  • 1 medium onion (chopped) if using hash browns
  • 1 medium green bell pepper (chopped) if using hash browns
  • 1 medium red bell pepper (chopped) if using hash browns
  • 2 cups ham (chopped)
  • 10 large eggs (beaten)
  • 1 1/2 cups cheddar cheese, shredded
  • 1 tablespoon butter or non-stick cooking spray
  • - salt and pepper to taste

How To Make weekend breakfast bake

  • Step 1
    Preheat oven to 375.Heat oil in large skillet. Add hash browns, onion, and bell peppers. Cook until potatoes begin to brown.
  • Step 2
    Butter or spray a 9 x 13 inch baking dish. Spread potato mixture in pan. Top with ham. Pour beaten eggs over all and season to taste with salt and pepper. Gently stir to coat all ingredients with eggs and sprinkle with cheese. Refrigerate overnight. Bake uncovered in a preheated 375 degree oven for 35 minutes.
