A smaller cast iron skillet is the perfect thing for this. I use mine for many things and they last forever. If you want the amount shown in the photo just double the given amounts.

Ingredients
- - cooking spray
- 1/2 - green bell pepper, chopped
- 4 ounces sliced mushrooms
- 2 - (1.3-ounce) frozen vegetable protein sausage patties, thawed and crumbled
- 1 pinch salt
- 1 pinch freshly ground black pepper
- 1/2 cup egg substitute
- 2 tablespoons fat-free half-and-half
- 1/4 cup (1 ounces) shredded reduced-fat sharp cheddar cheese

Step 1Preheat broiler.

Step 2Place an ovenproof nonstick skillet (small or medium) over medium-high heat. Coat pan with cooking spray.

Step 3Add chopped bell pepper and mushrooms; sauté 3 minutes. Add sausage, salt, and pepper; reduce heat to medium-low, and cook 1 minute.

Step 4Combine egg substitute and half-and-half; carefully pour over sausage mixture. Cover and cook 4 minutes. (Frittata will be slightly moist on top.) Sprinkle with cheese. Broil 1 to 2 minutes or until cheese melts. Cut into 4 wedges.
