This is a delicious breakfast casserole that I made for a food day we had at work and everyone loved it. This casserole takes a little bit longer to prepare but it is well worth it. It can even be made the day before and reheated in the oven in the morning. Enjoy!!

Blue Ribbon Recipe

A very fitting title for this breakfast casserole ... it truly is the ultimate. It reminds us of a breakfast bowl that has everything you love about breakfast inside and topped with a creamy gravy. Hash browns are the base for the layers of scrambled eggs, bacon, sausage, cheese, and country gravy. When baked, the gooey cheese and gravy layers melt into the other ingredients. This does take a little longer to prepare but it's so worth it.

NOTE: This recipe makes a huge casserole. For testing, we cut this recipe in half and baked it in a 9x13 baking dish. It was big enough to serve 5-6 adults at that size. Ingredients

  • 2 pkg
    diced, frozen hash browns (or you can make homemade if you prefer)
  • 2 (rolls) lb
    pork sausage, mild
  • 2 pkg
    bacon, maple flavored
  • 12 large
    eggs, scrambled
  • 3 c
    Fiesta blend cheese, finely shredded
  • 3 pkg
    country milk gravy mix (do not buy cheap brands, they taste watery)
  • 3 c
    water (for gravy mix)
  • ·
    salt and pepper

How to Make Ultimate Breakfast Casserole

Step-by-Step

  1. Mix up the water and gravy mix and start it cooking, making sure to keep stirring it to prevent lumps or scorching.
  2. You can deep fry the hash browns in oil until golden brown (I did this once and it turned out really well). Or in a skillet, add some butter and brown the hash browns really well. You have to cook the hash browns a little at the time to get an even browning. You could also do this in a large baking pan (you would have to just stir them to get them evenly browned).
  3. Scramble cook the sausage. Set it aside in a strainer, inside a bowl if possible, to strain all the grease off the sausage.
  4. Cook the bacon. Crumble it on a paper towel to absorb all the grease.
  5. Cook the scrambled eggs and set them aside.
  6. In a large deep dish baking pan, (I use the disposable foil pans for lasagna, works great and makes for quick and easy clean up), layer the hash browns, sprinkle a little salt and pepper to taste.
  7. Sprinkle a fine layer of cheese on top of the hash browns.
  8. Then a layer with half the scrambled eggs, sausage, and bacon. Top that with half of the gravy.
  9. Repeat layers and top the gravy with a layer of cheese.
  10. Place the casserole in the oven for about 20 minutes to melt the cheese and to bring everything together. Remove from oven and serve warm with your favorite toast, biscuit or bread.
  11. Or you could cover the casserole and place it in the refrigerator till the next morning. Place in a 350 degree oven for 30 minutes to warm it up and melt the cheese.
