Ingredients

  • 1/2 pound bacon, diced
  • 1/4 - green bell pepper, diced
  • 1/4 - red bell pepper, diced
  • 1 small chopped onion
  • 8 large eggs
  • 1 pound russet potatoes, peeled and grated
  • 2.75 cups sharp cheddar cheese, grated
  • 1/2 teaspoon pepper
  • - salt to taste

How To Make the carriage house breakfast pie

  • Step 1
    Preheat oven to 350 degrees.
  • Step 2
    Grease a large quiche dish or 6 to 8 individual ramekins.
  • Step 3
    Saute bacon, peppers and onion until soft.
  • Step 4
    Drain on paper towel.
  • Step 5
    Whisk eggs with potatoes, cheese, salt and pepper.
  • Step 6
    Mix in bacon and vegetable mixture.
  • Step 7
    Pour into prepared pan spreading mixture evenly.
  • Step 8
    Bake for 45 minutes, until center is set or knife inserted in center comes out clean.
  • Step 9
    Bake 20 to 30 minutes for individual ramekins.
