Ingredients For sunshine pancakes

  • 2 1/2 c
    all purpose flour
  • 1/2 tsp
    baking powder
  • 1 1/2 tsp
    baking soda
  • 1/2 tsp
    sea salt
  • 1 Tbsp
    sugar
  • 2 Tbsp
    light brown sugar
  • 2 lg
    eggs
  • 1/2 tsp
    vanilla extract
  • 1 1/2 c
    buttermilk
  • 1/2 c
    heavy cream
  • 2 tsp
    butter,melted
  • 1/4 c
    fresh squeezed orange juice
  • 1 tsp
    fresh orange zest
  • 1/4 tsp
    allspice, ground

How To Make sunshine pancakes

    Preheat your griddle to 350 degrees.

    Mix all wet ingredients and the orange zest. Blend thoroughly.

    In a small bowl blend the dry ingredients. Add to the wet ingredients and whisk until just blended. Do not overwork, that will make the pancakes rubbery.

    Pour batter onto hot griddle using a 1/4 measuring cup. Cook until bubbles rise to the top and start to burst, then turn over and cook until cakes rise and edges are dry.
