I always make this for our Sunday School class gatherings and you can vary the ingredients so many ways. It looks very nice and tastes even better. Even the teacher wants a piece of this put aside for later.

Ingredients

  • 4
    flour tortillas
  • 8 medium
    eggs
  • 2 1/2 c
    shredded cheddar jack/colby cheese
  • 1 c
    cooked & crumbled bacon
  • 1 c
    cooked & crumbled sausage
  • 1/2 c
    sliced mushrooms
  • 1/2 c
    sliced green onions
  • 1 medium
    tomato, thinly sliced

How to Make Sunny Tortillas

Step-by-Step

  1. Preheat oven to 375. Cook eggs as scrambled and set aside. Cook bacon & sausage, set aside.
  2. Place two flour tortillas in greased 9' pie plate. Top with half the scrambled eggs, 1 c. cheese, 1/2 cup bacon, 1/2 c. sausage, 1/4 c. mushrooms, 1/4 c. green onions.
  3. Put on another flour tortilla. Top with remaining egg, 1 c. cheese, remaining bacon, sausage, mushrooms and onions.
  4. Top with last flour tortilla. Arrange 5 thinly sliced tomatoes in circle on top and sprinkle remaining cheese on top. Bake 20 minutes or until cheese starts to brown lightly. Cut & serve warm as you would a pie.
