This casserole is great for St. Patrick's Day or anytime.

Ingredients

  • 1 pound bulk pork sausage
  • 1/2 pound sliced mushrooms
  • 1 large onion, chopped
  • 10 - eggs
  • 3 cups milk
  • 2 teaspoons mustard, ground
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 6 cups cubed day old bread, white, whole wheat, or mixed
  • 1 cup chopped seeded tomatoes
  • 1 cup pepper jack cheese, shredded
  • 1 cup cheddar cheese, shredded

How To Make st. patrick's brunch casserole

  • Step 1
    In a large skillet cook sausage, mushrooms, and onions ( stirring frequently) until meat is no longer pink. In a large bowl whick together eggs, milk, mustard, salt, and pepper.
  • Step 2
    Preheat oven to 325 degrees. Grease a 9 by 13 inch baking pan. In bottom of pan layer half of bread cubes, tomatoes, cheeses, and sausage mixture. Repeat with second layer of each item. Pour egg mixture over top.
  • Step 3
    Bake, uncovered, for 50-55 minutes or until a knife inserted in center of casserole comes out clean. Remove from oven. Let stand for 10 minutes before cutting.
