    sausage patties or your favorite healthy substitute

  • 2 c
    cooked grits
  • 1/2 sm
    onion, chopped
  • 1/2 sm
    tomato, chopped
  • 2 c
    Mexican blend shredded cheese
  • 2 dash
    salt (to taste)
  • 2 dash
    pepper (to taste)
  • 2 dash
    garlic powder
  • 1 Tbsp
    butter or substitute

1/2 cup of grits yields 2 cups of cooked grits.
  • Oven set to preheat.

    Preheat oven to 350 degrees.
  • Grits cooking in a saucepan.

    In a separate pot, cook grits approx 20 minutes, adding butter and salt to taste.
  • Cooked sausage cut into pieces.

    Cook sausage patties in pan on medium-high heat. After cooking sausage patties, chop them up in bite-size pieces.
  • Sauteed onions in a skillet.

    Add chopped onion, saute until soft.
  • Whisked eggs in a bowl.

    In a bowl, break eggs and stir well with fork.
  • Layer of sausage, onions, chopped tomato, and shredded cheese in a dish.
