Ingredients
- 4 medium sausage patties or your favorite healthy substitute
- 2 large eggs
- 2 cups cooked grits
- 1/2 small onion, chopped
- 1/2 small tomato, chopped
- 2 cups Mexican blend shredded cheese
- 2 dashes salt (to taste)
- 2 dashes pepper (to taste)
- 2 dashes garlic powder
- 1 tablespoon butter or substitute

1/2 cup of grits yields 2 cups of cooked grits.

Step 1Preheat oven to 350 degrees.

Step 2In a separate pot, cook grits approx 20 minutes, adding butter and salt to taste.

Step 3Cook sausage patties in pan on medium-high heat. After cooking sausage patties, chop them up in bite-size pieces.

Step 4Add chopped onion, saute until soft.

Step 5In a bowl, break eggs and stir well with fork.

Step 6In a 9x13 baking dish, layer sausage, onions, chopped tomato, and shredded cheese. (in that order)

Step 7Stir in grits and add eggs.

Step 8Stir.

Step 9Put in oven at 350 for 30 minutes. Take out and let set for 5 minutes.
