  • 1 lb
    smoked sausage
  • 12 medium
  • 1 1/2 c
    cottage cheese, small curd
  • 16 oz
    mexican blend shredded cheese
  • 2 medium
    yellow onions
  • 1 large
    red bell pepper
  • 16 oz
    jar of jal. peppers
  • 4 Tbsp
  • ·
    salt and black pepper to taste
  • 1/2 c
  • 1 c
    chopped olives

How to Make Smoked Sausage Breakfast Casserole


  1. Boil Sausage set aside to cool some, then food Process kind of chunky.
  2. Chop onions, olives, Bell Pepper
  3. wisk eggs add all ingredents except Cheddar cheese
  4. pour egg mixture in sprayed Pan add Sausage kind of stir in sausage top with 1/2 the Cheddar Cheese
  5. Bake in oven on 375 for 40 min
    once cooked take out add remaining Cheddar Cheese let it set about 5 min. for cheese to melt and serve or Foil over to Travel. Great for Sunday School Breakfast.
