I used my local Cajun Smoked Pork sausage

Ingredients

  • 1 pound smoked sausage
  • 12 medium eggs
  • 1 1/2 cups cottage cheese, small curd
  • 16 ounces mexican blend shredded cheese
  • 2 medium yellow onions
  • 1 large red bell pepper
  • 16 ounces jar of jal. peppers
  • 4 tablespoons butter
  • - salt and black pepper to taste
  • 1/2 cup flour
  • 1 cup chopped olives

How To Make smoked sausage breakfast casserole

  • Step 1
    Boil Sausage set aside to cool some, then food Process kind of chunky.
  • Step 2
    Chop onions, olives, Bell Pepper
  • Step 3
    wisk eggs add all ingredents except Cheddar cheese
  • Step 4
    pour egg mixture in sprayed Pan add Sausage kind of stir in sausage top with 1/2 the Cheddar Cheese
  • Step 5
    Bake in oven on 375 for 40 min once cooked take out add remaining Cheddar Cheese let it set about 5 min. for cheese to melt and serve or Foil over to Travel. Great for Sunday School Breakfast.
