Simple yet easy, effective and filling. :) This was a thrown together meal with a little bit of everything that we had leftover in the fridge. Turned out delicious. Feel free to improvise, throw in ham or chopped up bacon or sausage. Be creative and leave comments to let me know how you made it better!

Ingredients
- 1 large potato
- 1/4 cup onions
- 1 - egg per person
- 1/2 - tomato
- - cheese, shredded (optional)
- - salt and pepper, to taste
- - garlic powder, to taste
- - cooking oil
- - buttered toast
How To Make simple homefries

Step 1i usually boil the potato(es) the night before so i can skin them and have them ready for cooking in the morning,

Step 2Dice your potato, onion and tomato

Step 3Heat 2 tablespoons of oil in a skillet

Step 4Put potatoes in the heated oil and allow them to brown

Step 5Throw in onions when the potatoes are almost done browning

Step 6Allow onions and potatoes to saute while you scramble eggs in a bowl

Step 7Pour in scrambled eggs and mix potatoes and onions in while cooking

Step 8Put tomatoes in at the last minute, just to warm them

Step 9Sprinkle shredded cheese, salt, pepper and garlic into mix. Allow cheese to melt

Step 10Pour mix over buttered toast and enjoy :)
