Ingredients

  • 1 pound ground sausage
  • 1 medium yellow onion, chopped
  • 1 small green bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried marjoram
  • 1/2 teaspoon crushed rosemary
  • 1/4 teaspoon red pepper flakes
  • 10 large eggs
  • 1 cup milk (whole or 2%)
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Pepper Jack cheese

How To Make sausage, egg, and cheese casserole

  • Step 1
    Preheat the oven to 350 degrees F. Grease a 9×13-inch baking dish.
  • Step 2
    Brown the sausage in a large skillet over medium heat.
  • Step 3
    When the sausage is about halfway browned, add the onion and cook for 2 minutes.
  • Step 4
    Add the bell pepper and cook until the onion and bell pepper are soft.
  • Step 5
    Reduce the heat to low and add the garlic, thyme, marjoram, rosemary, and red pepper flakes. Stir and cook for 1 minute.
  • Step 6
    Add the mixture to the bottom of the prepared casserole dish.
  • Step 7
    In a large bowl, whisk the eggs, milk, salt, black pepper, and 1/2 cup of each cheese.
  • Step 8
    Pour the egg mixture over the sausage mixture. Sprinkle with the remaining cheese.
  • Step 9
    Bake for 35-40 minutes or until lightly browned and set.
